LOUISE MEI WAH QUAN is a second year undergraduate student from the Solomon Islands with Chinese and I-Kiribati heritage. Her pride and interest in her multicultural heritage has led her to the ANU, where she studies Chinese and Pacific Studies.
Cassava Pudding is a savory cake eaten in the Solomon Islands, and across other parts of Oceania. It is traditionally cooked in an outdoor oven.
CASSAVA PUDDING:
Ingredients:
1.3kg of scraped casava
2 cups of coconut milk (canned or squeezed from scraped mature coconut)
6tbs sugar
1.3kg of scraped casava
2 cups of coconut milk (canned or squeezed from scraped mature coconut)

Method:
Combine casava and sugar
Add in coconut milk and mix well
Bake at 180°C for 90min.
